Bikini Recipe
Yields 10 servings
For the Clementine Syrup (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Drink (makes 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Method
For the Cordial: Place the listed items in a saucepan, heat until it reaches a simmer, agitating until the sugar dissolves. After that, turn off the stove and leave to cool fully. Pour to a sealable bottle, seal keeping it in the fridge, where it will keep for up to a month.
To make Cocktail Base: Mix all the spirits and syrup into one large bottle, let it rest for an hour, then strain preferably using a fine cloth, to ensure it's perfectly clear.
When ready to serve: Add 85ml from the batch mix into a stirring glass packed with ice, gently stirring carefully for one minute to cool it down. Strain into a frosted cocktail glass or equivalent, decorate with some cranberries and finish using a light spray with the mandarin essence over the top.
